Cranberry Nut Muffins

1/3 cup oil
1/4 cup fresh squeezed orange juice
1/2 cup rice or soy milk
1 3/4 cup flour
1/2 cup sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
2 tsp. orange zest
1 cup fresh or frozen cranberries (chopped if desired)
1/2 cup nuts (walnuts or pecans)

Mix all ingredients together and pour into paper lined muffin pan. Bake at 400 degrees for 20 minutes.

Makes 18 medium size muffins.
